Bocconcini Pasta Salad
This bocconcini pasta salad recipe is served cold so is great for those hot days. It can be prepared in advance, put in the fridge and eaten for lunch or dinner.
2 cups penne pasta
1/2 cup bocconcini chopped
1/2 red onion finely sliced
1 cup cherry tomatoes halved
Handful of basil finely chopped
2 Tbsp Pesto
1/2 cup pine nuts (toasted if desired)
Parmesan cheese for serving
Boil the penne pasta until cooked, drain and leave to cool.
Once cooled, drizzle olive oil and add the pesto, mix well.
Add all the reminding ingredients and mix, serve with grated or shaved parmesan
